That said, I just received an e-mail from Chef Picard regarding items for the Langley Masters Darby post Match Bar-B-Q:

"I have changed my menu item to reflect Asian Pulled pork sandwiches with a Hoisin glaze and a light wasabi and peanut slaw. Keep the fryer clear for more variety."

I'm pretty sure you hate me more now FM.

Carlos usually brings the Salsa, and I do use a Mexican chilli powder mixed w/ brown sugar, sea salt, and ground pepercorn for the tenderloin rub. The tenderloin will be cut into 2" medalions and the rub applied to each individually Friday night. The 2" medalion allows the steaks to cook evenly and predictably in the deep fryer, and allows us to make room for the wings.
